& Guilds Seafood Retail Certificate
We currently have limited places available for a sponsored 2 day
City & Guilds Profile of Achievement Certificate in Seafood
. With sponsorship from Fishmongers' Company and City & Guilds
we aim to offer young people either in the industry or wanting to
get into the industry an opportunity to gain experience and acquire
new skills. City & Guilds is the leading provider of vocational
qualifications in the United Kingdom. Their qualifications assess
skills that are of practical value in the work place. They are recognised
for their quality and are valued by employers in every sector of
business.
The
course offered by Billingsgate Seafood Training School is run over
two days during which students are assessed on their product knowledge,
preparation skills, stock handling, knowledge of health and nutritional
qualities of seafood. Students are given worksheets to complete
that are then returned to the school for assessment and verification
by City & Guilds.

course is also available to individual young people attending the
school on a day release basis including work experience.

N.B.
Places are limited and we ask applicants to submit a letter or email
to support their case and explain why the course will be of benefit
to them. A payment of £300 is required to secure your place
on the course, as this is a funded course, this will be refunded
after attending the course and submitting the work book. We also
ask for a non refundable fee of £50 each candidate to cover
the cost of meals refreshments and fish used on day 1 (that students
take home).

0915 – 0945 Introduction and objectives (skills scan review)
0945 – 1115 Counter skills and display customer service
1115 – 1215 Assessed Skinning, gutting and filleting skills
1215 – 1300 Lunch
1300 – 1500 Assessed Skinning, gutting and filleting skills
1500 – 1530 Coffee
1530 – 1630 Fish Quality Assessment and ID
1630 – 1730 Oral Assessments

Day 2
0600 – 0800 Fish ID and Awareness (Educational market visit)
0800 – 0830 Breakfast
0830 – 1000 Shellfish Quality—Assessing Freshness
1000 – 1300 Preparation of various fish dishes & nutritional aspects and health benefits of eating seafood
1300 – 1500 Fishmongering open forum with Industry Representatives
1500 – 1600 Oral Assessments
1600 – 1630 Course round up, workbook handouts and finish
Workbooks should be returned three months after attending the two
day course.
