This 2 day course is sponsored by Fishmongers' Company and City & Guilds and would usually cost over £500. However, if you are a successful applicant, you will only need to pay a non-refundable fee of £50 towards fish costs and refreshments for the two days. This will need to be paid prior to the course. As part of the of the programme you will need to complete the course species sheets before the course takes place. This confirms that attendees are committed to attend and complete the course which includes a coursework book. The coursework worksheets will be emailed to you once payment has been made.
The City & Guilds Retail Certificate offers an opportunity to gain valuable experience and knowledge about various areas of the Seafood Industry.
Day 1 focuses on cutting fish and quality assessment
Aquaculture and Sustain issues
Day 2 on the cooking and selling of fish and shellfish, display and customer service. .
An experienced fishmonger trainer leads the course and there is an assessment of each candidate during the practical session and theory sessions.
Timings:
2 days, attendance on both days is required to complete the course
Day 1: 0830 - 1600
Day 2: 0545 - 1330

What to Expect
Expect an intense course with plenty of fish preparation on day one with fish quality assessment lectures. On day two there will be a market visit and shellfish lectures. The majority of the rest of the day is spent in the kitchen with our chefs who will inspire and demonstrate a variety of cooking methods and discuss the health benefits of eating fish and shellfish.
Who should attend
This course is primarily aimed at people currently working in the industry, those wanting to get into the trade or experienced fishmongers who want formal recognition of their skills and knowledge. To register interest or to apply for a place please email us on admin@seafoodtraining.org. We ask for a letter of application detailing why this course is of benefit to the attendee.
What you take home
During day one attendees work on fish preparation skills. Fish prepared can be taken home and enjoyed! Recipe and healthy eating leaflets are supplied.
Can I buy fish?
Fish can be purchased during the Market visit on Day 2. Although we have limited freezer space, we have a large fish chiller to store purchases for the duration of the course.
