Running once a month our NEW SEASONAL SEAFOOD WORKSHOPS focus on the best fish on the market each month.
Join us for tea, coffee and toast at 5.45 - 6am.
After a short market briefing you will join the training team in the market and will focus on identifying the very best fish of the day. Three of the very best seasonal species will be purchased and taken back to the kitchen for preparation and ready to cook.
You return to the kitchen and working as a team prepare your own fishy breakfast - this may be Home Smoked Mackerel Kedgeree. Home Hot Smoked Salmon Baguettes (you will prepare and smoke your own fish).
After breakfast the class set about preparing the fish purchased under the watchful eye of the trainer for the day. The species could be anything from witch and megrim to herrings, grey mullet, a whole saithe, scallops, squid or whiting. Everyone will have either mackerel, trout or sockeye salmon fillet to prepare and cook for breakfast.
The trainer leading the course will talk about ways to cook the fish and some dishes will be demonstrated to taste.
You leave at around 12 - with a bag of prepared fish and some fabulous recipe ideas.
There is lots of fish preparation and bundles of tips and tricks to understand the preparation and cooking of many types of seafood. There is no cooking on this cousre, but plenty of opportunity to ask about cooking methods and plenty of fish to taste at the end of the day.
