This Autumn we are delighted to offer some 'Update your Knowledge' workshops to showcase what is new and currently trending within the seafood industry.
Next date: THURSDAY 3RD NOVEMBER
Our UPDATE YOUR SUSTAIN KNOWLEDGE event is a free course (with a small booking fee) for chefs, catering managers, restaurateurs and those within food service. It is an opportunity for interested individuals OR groups from the catering and food industry to have an educational guided visit around Billingsgate Market trading floor during operational hours and to experience the global species on offer, understand quality and to meet the merchants of this iconic market.
A 'fish' breakfast is served in the school kitchens after the market visit.
A sustain update will be led by Melissa Pritchard - Head of Sustainability at New England Seafood. Melissa will be joined by a number of presenters including: Norwegian Seafood Council, Alaskan Seafood Marketing Institute and Royal Greenland - amongst others.
After the lecture our blockman fishmonger will deliver an informative and entertaining cutting demonstration using under-loved species of fish and shellfish. The chef-team at the school present a comparative tasting of all the species on offer.
