Bring your Valentine to the Seafood School for an oyster shucking (opening) and tasting session and enjoy a glass of Champagne in our 90 minutre workshop.

The workshop will teach you how to open oysters safely and how to taste and appreciate the different oysters on offer. We will talk through some of the history of oyster sales at Billingsgate market and how we now appreciate them both raw and cooked.

Each person will open 8 Pacific oysters each. 

Half of the oysters will be served au naturel as a raw comparative tutored tasting. The second half of the oysters will be served Grilled with Pancetta, Dill, Creme Fraiche and Pernod. 

We will include oysters harvested from: West Mersea, Carlingford Bay, River Swale and Colchester. There will be a tutored tasting of each area of harvest. 

To finish the evening, the chef training team will include a native oyster to compare texture, flavour and unami. 
You take away a recipe pack with some ideas for serving and an oyster knife per couple to try it out at home.
