What to Expect
After a brief introduction to life at Billingsgate your day begins with a escorted market visit where you will learn how to identify quality and the many species of fish and shellfish on sale. Breakfast is served in the school kitchens when there is an opportunity to ask further questions.
The first part of the course begins with a hands-on fish preparation session including how to make a good fish stock. Our selection of species will reflect the seasonal best on the market that day and may include trout, mackerel, plaice, lemon sole, gurnard, sea bream, saithe or whiting and some shellfish such as prawns and mussels. Once your fish is prepared the chefing team will talk through ways for you to cook it at home, demonstrating several recipes and innovative ideas. We try to cover as many simple cooking techniques and flavour pairings as possible. You get to taste these dishes along with your own Billingsgate Merchants Fish Soup as part of your lunch, with a glass or two of wine. The rest of the fish that you have prepared is then ready to take home in your complimentary Billingsgate Seafood School cool bag.
Who should attend
If you want to learn some fishmongering basics: gutting, skinning, scaling, filleting and pin-boning - this is the course for you. Our recipe ideas on this course are versatile but simple and designed to inspire. Our focus is to demonstrate just how quick and easy it is for you to include all types of seafood in your daily diet. Stock making is included as part of this course. There is always a lot to learn and this is suitable for complete beginners or those who want to improve their knife skills. All you need is enthusiasm.
What you take home
You will have prepared around 6 species of seafood. Some is enjoyed for lunch. The remainder is yours to take away in your complimentary cool bag. Advice will be given about storage and freezing.

Can I buy Fish
There will be an opportunity to purchase extra seafood (fresh, frozen etc) as you are escorted round the market. At the school we have limited space in the freezer for storage during the day, but we do have a large chiller. If you want to purchase more fish you will need to bring a cool bag. Cash is usually required to make purchases as most businesses will not take cheques or cards.
