Informal and informative, this course is ideal if you have some prior experience with preparing fish (possibly gained through attending Catch of the Day 1), but would like to extend your fish repetoire to make the most of all seafood on offer.
Timings
6.15am - 2.15pm approx
The school opens at 6.00am for registration at 6.15am. Don't forget that traffic is usually much lighter at this time of day. For estimated travel times to the market see FAQ's.
If you do arrive before the school opens, you can get a flavour of Billingsgate life in one of the two cafes on the market.

What to Expect
After a brief introduction to life at Billingsgate your day begins with a escorted market visit where you will learn how to identify quality and the many species of fish and shellfish on sale. Breakfast is served in the school kitchens when there is an opportunity to ask further questions. Previous attendees on our other courses still enjoy and benefit from a second visit as there is so much to see and remember or choose a later start
The first part of the course begins with a hands-on fish preparation session including how to make a rich seafood stock. For 'Catch of the Day 2' we select some of the more unusual fish available on the day: These may include: John Dory, red mullet, mahi mahi, grey mullet, farmed halibut, pollock, cuttlefish or crab. We cover the basics of fish preparation as they apply to these species and help you to build more confident knife skills.
The chefing team will focus on presenting some basic cooking techniques and flavour pairings, but the recipes are more complex than on Catch of the Day 1. You make a classic Seafood Risotto for lunch and you get to taste the innovative dishes that the team have prepared during the morning, along with a glass or two of wine.
The rest of the fish that you have prepared is then ready to take home in your complimentary Billingsgate Seafood School cool bag.
Who should attend
This course is most suited to those who have attended 'Catch of the Day 1' and who now want to gain more confidence dealing with some new fish and shellfish species. Our recipes for this course are a little more challenging but still demonstrate ease and versatility. Some basic fish preparation techniques include scaling, gutting, pin-boning and filleting experience is helpful as is interest and enthusiasm.
What you take home
You will have prepared around 6 species of seafood. Some is enjoyed for lunch. The remainder is yours to take away. Advice will be given about storage and freezing.

Can I buy Fish
There will be an opportunity to purchase extra seafood (fresh, frozen etc) as you are escorted round the market. At the school we have limited space in the freezer for storage during the day, but we do have a large chiller. If you want to purchase alot more fish you will need to bring a cool bag. Cash is usually required to make purchases as most businesses will not take cheques or cards.
