Silla Bjerrum the managing director of Feng Sushi delivers this very popular day. She focuses on the key ingredients and techniques used in Japanese cooking and de-mystifies the making of sushi and sashimi. The day includes the preparation of several types of sushi and sashimi, but includes minimal fish preparation.

FOR SATURDAY COURSES:

The course starts at 8.30am and the school opens at 8.15am as there are no market visits on a Saturday.

What to Expect

The day begins with a brief introduction to life at Billingsgate, followed by an escorted market visit learning how to identify quality and the many species of seafood - but in this case - specifically fish suitable for sashimi or popular in Japanese cuisine. Breakfast is served in the school kitchens when you can ask further questions.This is a fun and informative day where we aim to cover as many aspects of sushi and sashimi preparation as possible.

After breakfast we give a short introduction to the day and covering the techniques and recipes to be cooked.During a hands-on practical session you are guided through the preparation of sushi and sashimi. Advice is given on how to cook sushi rice to perfection and then with Silla's innovative style - there is an opportunity to create a selection of sushi and sashimi. Some of this is enjoyed for lunch the rest is packed away for you to take home.

This is an excellent day that takes an indepth look at the simple, but exacting preparation of sushi and sashimi. The recipes prepared are taken from Silla's book.

What you take home

Sushi and sashimi from the day. Silla will have copies of her book available on the day.

Can I buy Fish

There will be an opportunity to purchase extra seafood (fresh, frozen etc) during the market visit. At the school we have limited space in the freezer for storage during the day, but we do have a large chiller. Cash is required to make purchases as most businesses will not take cards or cheques.
