Quality Assessment Courses for Technical Managers and EHP's (SHELLFISH)

Cost: £150.00 

This quality assessment course is designed for environmental health officers and technical managers within seafood companies.

The course is delivered over an eight hour period and includes a market visit. This course can be followed by the Quality Assessment of Fish.

 

Timings


The school opens at 6.00am with registration at 6.15am in office 29.

What to Expect

On arrival at the school and registration, there is a short introduction about Billingsgate Market. This is followed by an escorted market visit that looks at species identification and quality assessment.

After a light breakfast there is a practical fish preparation demonstration led by a fishmonger. This is followed by an overview of fish processing, smoking and fish farming.

After a short coffee break there is a sensory assessment using Quality Index Method (QIM). This let by Adrian Barrate, Seafood Consultant.

After lunch there is a question and answer session before closing at 2.pm.

If you want to make the most of a visit to the market and purchase fish you will need to bring cash. We have a small amount of storage space for both fresh and frozen product.
