City & Guilds Retail Certificate Courses

This 2 day course is sponsored by Fishmongers' Company and City & Guilds and would usually cost £400 approx. 

Due to high demand for these assisted places we require a deposit of £300. After an administration charge of £50 is deducted, £250 is refunded on completion of the course and associated paperwork.

This 2 day course offers an opportunity to gain valuable experience and knowledge about various areas of the industry. Day 1 focuses on cutting fish and Day 2 on the cooking and selling of fish.

An experienced blockman trainer leads the course and there is an assessment of each candidate during the practical session.

Attendance on both days is required to complete the course

Day 1:  Wednesday 3rd October (9.30am - 5.00pm)

Day 2: Thursday 4th October 2012 (6.15am - 3.00pm)

What to Expect

Expect a intense course with plenty of fish preparation on day one with quality assessment lectures. On day two there will be a market visit and further lectures. The majority of the the rest of the day is spent in the kitchen with our chefs who will inspire and demonstrate a of cooking methods and discuss the health benefits of eating fish and shellfish.

Who should attend

This course is open to all but is primarily aimed at people currently working in the industry or as a fishmonger and requiring formal recognition of their skills.

 

We have confirmation of funding to deliver this in the Autumn.

What you take home

During day one attendees work on fish preparation skills. Fish prepared can be taken home and enjoyed! Recipe and healthy eating leaflets are supplied.

Can I buy Fish

Fish can be purchased during the Market visit on Day 2. Although we have limited freezer space, we have a large fish chiller to store purchases for the duration of the course.
