public courses goes towards offering free courses for young people.



All
general public courses are lead by expert instructors (such as CJ
Jackson above) who work alongside small groups to make sure every
course offers a really practical and insightful experience. Fish
cookery courses can be full day, half day or evenings.

Our
practical knife skills courses offer hands on experience preparing
a wide variety of flat and round fish. You will not only learn how
to prepare seafood with confidence, but also take a sack full of
fish home too!

Educational
market visits focus on species identification and quality assessment.
Over 120 species of fish and shellfish from all over the world are
traded daily from Billingsgate, this offers an amazing opportunity
for small groups to be shown first hand what to look for when selecting
seafood. Market tours are often part of full day courses at the
School. More

The
School's facilities includes a fully equiped knife skills room that
can accommodate a maximum of sixteen students. Newly installed kitchens
offer up to sixteen students the opportunity to take part in practical
cookery classes lead by an instructor. There is also a lecture theatre
and obviously Billingsgate Market itself to make up the first class
event facility. Subject to availability these facilities can be
booked for Corporate days, for rates and ideas for an exciting and
