Association are now offering a free (subject to agreed funding)
introductory seminar to anyone who wants to get into the trade and
become a fishmonger. Fishmongering can be exciting and rewarding;
however access into the business lacks a formal training route.
This course is aimed at people who are not currently in the trade
and is designed as a taster into the Seafood Industry. The day is
also for people who are looking at setting up their own seafood
business or for small businesses who would like to develop their
staff.

This
is what some of our recent participants thought of the the day:
"I
wanted to drop you a line and say thank you for what in my opinion
is the best course days education I have ever had, the passion Charlie
has for fish is truly infectious and I can't praise the course highly
enough, I thank you for that." Mr Raymond, August 2010.
"My
husband and myself have been both excited and daunted at taking
over an existing mobile fishmongery business. We had been looking
for training to help us and fortuitously came upon the Seafood Training
School. Although it's quite a distance for us to travel, we are
so pleased we made the journey as we learned so much from the training
day 'Get into Fishmongering'. Going round the market was a real
eye-opener and lots of thanks to Charlie for pointing out how to
identify the quality of fish, the range of fish we saw was amazing
and hopefully we'll increase our stock in the months ahead. The
practical skills of filleting were very useful and we got lots of
tips on the practicalities of running a fishmongers. We look forward
to coming up for more training courses in the future and been able
to tell you that our business is going from strength to strength!
Thanks to Charlie and Adam for all their support, help and advice,
I'm sure it will pay off." Mrs Colvin, August 2010.
"I
have just got back home after attending the "Get into Fishmongering"
course and felt compelled to write to express my sincere thanks
to all at Billingsgate Seafood Training School for the most fabulous
and interesting day. Extra special thanks must go to Adam for the
smooth way in which everything was organised from start to finish
and of course the excellent lunch that he served up for us all....hidden
talents I think!”
“I
must also say a massive thank you to Ken for his patience and encouragement
in the knife skills part of the day, especially as we all hacking
at the fish to start with but with his guidance and on hands approach
we finished off producing some saleable produce. The star of the
day for me though was Charlie who we were fortunate enough to have
the Market Tour with. His knowledge and passion for the trade will
stay with me for a very long time and I just hope that I have half
the enthusiasm and passion for the trade when my time comes to start
my business as a Fishmonger. He took the time to explain everything
and no question was left unanswered especially as we bombarded him
for nearly 3 hours!! We drained every bit of information out of
him as we could in the short space of time we had on the Market
Floor.....I could do the market tour another 50 times and would
still not get bored of listening to Charlie passing on his knowledge.
He is a massive credit to the industry and I just wish I had someone
like him to train me in the art of Fishmongering. This introductory
course is an absolute must for all wanabee Fishmongers you cannot
fail to learn from these two men with over 100 years industry experience.
I will definitely be attending more of your wonderful courses and
therefore look forward to meeting up with you all again in the very
near future. Thanks once again!”
"
I am writing to express my thanks for such a wonderfully informative
and instructive course. The market tour was the highlight of the
course for me and illustrated how much Charlie knew and also that
he was willing to try and pass on as much of this as possible. The
practical aspects of the course were also first rate and again Charlie's
knowledge and patience shone through; he made everybody feel comfortable
and welcome and nothing was too much trouble to explain or demonstrate.
I would also like to mention how excellent the facilities were and
what a nice touch the bacon sandwiches and hospitality in general
was!"
"It
was great to learn some new ways to prepare fish. Charlie was both
informative and entertaining. I am very interested in further courses.
I would appreciate receiving information on any courses available.
Since the course I have added a good filleting knife to my collection
and have practiced the techniques Charlie showed us. I am particularly
keen to learn more about knife techniques."
"This to thank you very much for the successful day I had on
the recent fishmongering course (6th October). I thought the course
was excellent in terms of content and delivery, and by the end of
the day I felt very pleased with the outcome."
