to:
Sustainable
and seasonal South West Seafood 11.10.11

We
welcome the London catering and hosptality trade to join us and
enjoy the best seasonal, sustainable south west fish and shellfish
at Billingsgate Seafood School on Tuesday 11th October. The day
is particularly suitable for trade buyers, chefs and restaurateurs
who would like to see first hand the preparation and cooking methods
of some fantastic foods including gurnard, hake, megrim, witch,
scallops and pilchards.
The
morning will start with an optional Market visit of the exciting
Billingsgate Market trading floor. The focus will be on products
from the South West and those Merchants that regularly receive their
fish from the region. After breakfast the South West Food &
Drink team will introduce the rest of the day and split the attendees
into two groups who will then move into either fishmongering or
chef innovation workshops. Following a coffee break the groups will
change over and come back together for a light lunch at 1200, the
event is scheduled to finish at 1230.

A
day for chefs, restaurateurs and trade buyers, the event is free
but registration is required using the Seafood School's online reservation
