After a brief intro to the market as it closes for the week, we head over to the kitchen where we will teach you a range of knife skills and preparation techniques to build your knowledge and confidence. We will send you home with the fish or shellfish that you have prepared during the class.
By taking one of our classes you will not only be learning some great new skills but will also be supporting our charitable educational programmes for school children and young people pursuing careers as fishmongers and chefs and in the wider seafood industry.

The availability of fish is very weather dependent. If we cannot buy the species referred to in this description of the class, we will always provide a suitable alternative.

Saturday 30th October
Bass & Bream Basics
Working with both bass or bream, you will learn how to trim, scale, fillet and pin-bone these popular fish. Everything you prepare you take away and we will give you lots of innovative ideas with how to cook them.
Saturday 6th November
Flat Fish Techniques
We have a fabulous selection of flat fish caught around the UK coast: Flounder, Plaice, Witch (Torbay sole), Megrim, Lemon sole and several more. Working with a selection of these and learn how to prepare then, we will share lots of great ideas with how to cook them.
Saturday 4th December
Dressing crab & cracking lobster
Learn how to choose the best brown crab and lobster in season, and you will spend a great morning picking meat out of the crab, learning what you do and don't want to eat, and preparing a lobster for thermidor.
